Ingredients:

  • 1 (20 oz) can of jackfruit (in water or brine)
  • 1/2 cup red onion, chopped
  • 1 tsp each: chili powder, garlic powder, paprika, cumin, salt
  • 1/4 tsp cayenne pepper
  • 1/2 cup BBQ sauce of your choice
  • 6 bread rolls

Coleslaw Mix:

  • 1/4 head of cabbage, shredded
  • 1 carrot, shredded
  • A handful of cilantro, chopped
  • 1 avocado, mashed
  • 1 lime, juiced

Directions:

  1. Prepare Jackfruit:
    Rinse the jackfruit thoroughly and squeeze out as much liquid as possible (don’t skip this step to avoid a mushy texture). Add the seasonings and set aside.
  2. Cook the Onions:
    Heat a pan over medium heat, add oil, then sauté the chopped red onions until slightly tender.
  3. Sauté Jackfruit:
    Add the seasoned jackfruit to the onions and cook on medium-high heat for about 10 minutes, stirring frequently, until the jackfruit turns a slightly darker brown.
  4. Add BBQ Sauce:
    Stir in the BBQ sauce and add salt to taste. Lower the heat, cover the pan, and let it simmer.
  5. Prepare the Coleslaw:
    In a bowl, mash the avocado, then mix in the lime juice and salt. Add the shredded cabbage, carrot, and cilantro, and toss everything together.
  6. Assemble the Sliders:
    Add the jackfruit to the bottom half of the bun, pile on the coleslaw, and top with the other half of the bun. Enjoy! 😋
