This hearty and flavorful one-pot meal combines ground beef, black beans, corn, and enchilada sauce, all simmered with crispy tortilla strips and melted cheese. Topped with fresh garnishes, it’s the perfect cozy and easy weeknight dinner!

Ingredients:

  • 1/2 cup diced onions
  • 1 packet (1 oz) taco seasoning
  • 1 cup enchilada sauce
  • 1 1/2 cups shredded cheese (cheddar or Mexican blend)
  • 4 small flour or corn tortillas (cut into strips or small pieces)
  • 2 tbsp olive oil
  • 1/4 cup sliced black olives (optional)
  • Salt and pepper, to taste
  • Fresh cilantro, for garnish
  • Sour cream

Directions:

  1. Cook the Ground Beef:
    • Heat olive oil in a large skillet over medium-high heat.
    • Add the diced onions and sauté until softened, about 2–3 minutes.
    • Add ground beef and cook until browned, breaking it up into crumbles as it cooks.
    • Drain any excess grease.
  2. Season and Mix:
    • Stir in taco seasoning and cook for 1 minute.
    • Add black beans, corn, and enchilada sauce.
    • Stir to combine and reduce heat to medium.
  3. Add Tortilla Pieces:
    • Gently fold in the tortilla strips, ensuring they are fully coated in the sauce.
    • Let the mixture simmer for 3–4 minutes so the tortillas soften and absorb the flavors
  4. Top with Cheese:
    • Sprinkle the shredded cheese evenly over the skillet.
    • Cover with a lid and cook on low heat for 3–5 minutes, or until the cheese is melted and bubbly
  5. Garnish and Serve:
    • Remove from heat and garnish with fresh cilantro, sour cream, avocado slices, or sliced black olives as desired.
    • Serve hot directly from the skillet for a cozy, one-pot meal.
